Mexican Pie


Mexican pie is a dish I made up the other night by experimenting with what I had! It turned out to be pretty good! So now I am sharing it with you readers! ~ Alainna




Mexican Pie
 
Ingredients: 
  • oil (olive, cooking, vegetable, or canola)
  • tortilla shells                                            
  • one 24 oz can refried beans                     
  •  one 16 oz can green beans                      
  • 1/4 cup finely chopped onion                  
  • 1/4 cup finely chopped celery                  
  • 1/2 a cup of cheese (or more)                   
  • 1 tsp Paprika                                             
  • 2 tsp chili powder                                     
  • 1 grade AA egg                                          
 
Tools:
  • 1 large bowl                                           
  • 1 small bowl                                          
  •  1 whisk                                                 
  • oil brush                                                
  • 1 9x13 or 8x8x4 pan    
                            
Directions:
  • Brush bottom and sides of pan with oil. 
          cover the sides and bottom of pan with tortilla shells
  • in small bowl, beat the egg, paprika, and chilli powder. save until later.
  • In large bowl mix refried beans, green beans, onion, celery, and egg mixture. stir until well mixed and then add the cheese.
  • put bean mixture in pan over the tortillas 
  • cover with oiled tortillas and cheese (if you want)
  • cover pan with lid (or aluminum foil)
  • bake in oven at 350 degrees for 30 min.

    (optional)   Serve with sour cream, salsa, and olives.
